Optimum quality lobsters are selected and immobilised
in fresh water after which the head and tail
are separated. The intestinal tract is then
removed from the tail section. The tail is washed,
cleaned, and drained ready for size grading,
individual wrapping and packing into 10lb (4.54kg)
and 25lb (11.34kg) cartons.
The product is then snap frozen to -40°C.
Shipment are made in 20 containers of
1100 x 25lbs or 2400 x 10lbs or in AVE (LD3)
air containers of 112 x 25lbs or 270 x 10lbs.
